I'm posting this in the Kids' section because it's my 6yo's favourite, however it's fine for the whole family, if a little bland for grownups! Converted from Family Circle's Cooking - a Commonsense Guide (my bible).
Name of Recipe: Chicken & Corn Chowder
Number of People: 4 adults
Ingredients:
2 x Chicken fillets, cut into pieces
20g butter
5 spring onions, roughly chopped
2 rashers bacon, roughly chopped
1-2 celery sticks, roughly chopped
450-500g potatoes, diced
2 cups/500ml chicken stock (sorry forgot to weigh)
1 1/2 cups milk (I think this equals 400g, forgot to weigh again!)
420g can creamed corn
700g water
Preparation:
Place water in TM bowl & chicken into simmering basket. Insert basket & cook 12-15 mins on 100/speed 3. You may need to stir chicken half way through to ensure it is cooked
Remove basket, drain TM bowl. Place chicken in bowl & shred 3-4 secs/Reverse/speed 4. Remove chicken & set aside.
In clean TM bowl, place onions,bacon & celery and chop 2-3 secs/speed 6.
Add butter and cook 3 mins Varoma temp/speed 1.
Add potatoes and cook 2 mins/Varoma temp/speed 1.
Add chicken stock, cook 15 mins 100/Reverse/speed soft, or until potatoes are tender
Add the shredded chicken, milk and creamed corn and heat through - struggled with this bit, took about 15 mins on 80/Reverse/Speed Soft I think?
Serve with cracked pepper
Tips/Hints: This is my first conversion so apologies if some of the instructions are a bit vague. I know there's other chicken & corn recipes on here but I'd be in Big Trouble if I messed with this recipe so had to convert!
You could of course cook the chicken any other way, or even use bbq chicken; I used Tenina's method but I've been asked NOT to shred the chicken next time - DD likes it chunky!

bkmundt - Our almost 6 year old loved it, as did us adults. Thanks for the recipe. I added only 300 ml of milk and that was great for us. I like thicker soups!
