Goose Eggs

Hi, I am new to this and hope I am asking in the right place.  Basically I would like to know volumes for sponge cakes using goose eggs in the thermomix.  Has anyone made other goose egg recipes in TM?  Thanks in advance for any feedback!  Amph

Amph,  long time ago,  I made sponges with goose eggs.   I think that I weighed the egg,(without shell).  The TMX method shouldn't be any different.   They taste a lot richer than hen eggs.  30 years later the kids still talk about them.  I haven't made any sponges using the TMX.   Someone else I'm sure can help.

Interesting question amph. I have not seen a goose egg in maybe 40 years. I am sure some of our themomixers here must have geese. Thank you so much for your help I will have a look at the threads.  I have made the best swiss roll ever using the TMX but goose eggs are a whole new ball game to me - I'll let you know how I get on.

You may be best to weight the egg yolks and white separately & go with about 30g white & 20g yolk for normal eggs.

They should be nice and rich though.  My grandmother used them when I was young and they made great sponges.

I asked Rodney Dunn at the Agrarian Kitchen,  last weekend.  He has geese and said they allow 1 Goose egg to 3 hen eggs.  Hope this helps.
