I know I have already posted a similar recipe on this forum - but this one has apricots!Ingredients:140g Turkish apricots
65g butter, softened
115g caster sugar
2 eggs
1 teaspoon vanilla essence
75g Self Raising flour
10g cocoa
40g milk
Sauce:
½ cup brown sugar (90g)
1 tablespoon cocoa
1 cup boiling water (250g)
Preparation:Preheat oven 180
oC. Grease ovenproof dish.
1. Chop apricots in TM bowl
10 secs, Speed 5. Set aside
2. Insert
Butterfly. Cream butter and sugar
3 mins, Speed 4. Scraping sides of bowl occasionally.
3. Add eggs and vanilla essence. Mix for
30 secs, Speed 3. Scrape sides of bowl.
4. Add flour, cocoa and milk and mix
30 secs, Speed 3.
5. Add apricots,
10 secs, Speed 2. Spoon into ovenproof dish.
6. Mix sauce ingredients together until sugar is dissolved and pour carefully over the rounded side of a big spoon over the pudding mixture.
7. Bake in oven 45 – 50 mins.
8. Serve warm with cream or icecream, or even custard.
