« on: January 20, 2011, 12:16:57 am »
I love this banana bread -would really appreciate if someone could convert for me, thanks!!

Bill Granger's Choc Banana Bread
bills food (bill granger)

250g plain flour
2 tsp baking powder
125g unsalted butter, softened
250g caster sugar
4 ripe bananas, mashed
2 eggs, lightly beaten
1 tsp vanilla extract
175g good-quality dark or milk chocolate chips

Preheat the oven to 180C. Sift the flour and baking powder into a large bowl.

Mix the butter, sugar, banana, eggs, vanilla extract and chocolate chips in a separate bowl. Add to the dry ingredients and stir to combine, being careful not to overmix.

Pour the batter into a non-stick, or lightly greased and floured, miniature loaf tray.

Bake for 45 minutes, or until the loaves are cooked when tested with a skewer. Leave to cool in the tin for 5 minutes before turning out onto a wire rack to cool.

Makes 8 mini-loaves.

ladybird, try this and edit your post so it can be put amongst the other recipes. I would specify raw sugar, and not worry about lightly beating the eggs prior. Whenever you want to convert a recipe look up your EDC to see something similar eg. p118

Method:
Pre-heat the oven to 180o and lightly grease and flour 8 x miniature loaf trays.
Add raw sugar to TM and set 3 secs on Speed 9.
Add all ingredients (except for chocolate chips) to TM bowl, and mix for 15 seconds on Speed 6 or until just combined - do not overmix.
Add chocolate chips, set on  :-: Reverse, Speed 3, 10 seconds until combined.
Pour into tins, and bake for 45 minutes until loaves are cooked when tested with a skewer. Leave to cool for 5 minutes before turning out onto wire rack to cool.

ok, its in the oven - both me and DD think the mix tastes great :)

this is definitely more a cake than a bread so you might want to move it - I've actually done it in cupcake cases as well as a mini round tin...
