Flat Bread Recipe please

As you know we are going to Birdsville later this year and I'm looking for a recipe for a sort of flat bread or pita bread or something similar. I won't have the tmx with me but will have 3 others who can help knead.
My thought is to have the dry mix all made up and just add liquid when we need to make some. Then we would cook them on a BBQ plate. ( DH says an old dirty shovel but I don't think so).

I think a double bag with the yeast, flour, etc would travel ok over the bumps, hills and sand. Then we would make them in the afternoon/ evening for the next days lunch.

I have found the ones on Chelsea's blog and they look good.
