A very different salad starring raw beetroot, but more than a variation of the EDC Beetroot Salad. This one has a lovely citrus dressing drizzled over chunks of grapefruit or orange, a pile of fresh beetroot and a sprinkling of chopped herbs.

I am really pleased that you made this, and mostly that you enjoyed it. Fresh and real wins everytime, I reckon. A suggestion is try a mix of oranges and ruby grapefruit for even more colour and sweetness. Well done!
