Well I think I might have set a new TMX record for the longest time to make butter - 13 minutes!!!!
Yep, so much for the 1 - 3 minutes but hey, it worked - all 4 batches of it.  (I had a lot of cream starting to mount up in my fridge!)
Admittedly, 1 batch only took 10 minutes - ONLY!  Must depend on the freshness of it I guess.
So there you go, not exactly fast but it was perfect in the end, absolutely delicious and smooth and well, buttery!
So just in case anybody else out there is using raw cream - don't give up!   :)

I have been wanting to make my own butter for a while now but can only find thickend cream at the shops, where does everyone get their fresh cream from ??

I live in a small country town in Yackandandah country Vic 25 min from Albury/Wodonga (the NSW, VIC border towns)

How lovely. Any dairies around? If not then you should be able to buy pouring cream from any Coles or Woolies. Usually it comes in a cardboard carton as opposed to a plastic bottle and is usually placed above the thicked cream. Worth the effort to find it. The older the cream the better for making butter and don't throw out the buttermilk either. Great for making pancakes or sauces or cakes or whatever you like.

Ah pouring cream, i will look for that. There are quiet a few dairy's around but untill i am considered a bit more of a local i dont want to go hasseling people, we are a little place - so dont want to get off on the wrong foot  ;D

Well if I owned a dairy in such a wonderful place I would be delighted if someone knocked on my door asking for fresh cream to make butter. You might make a new and very good friend. If you get the short shrift I would be surprised. You can always then return with  a loaf of fresh bread made with the buttermilk and a tub of butter by way of thanks. You can always make a batch of Marmalade from the EDC to go way over the top. ;D ;D ;D

and don't throw out the buttermilk either. Great for making pancakes or sauces or cakes or whatever you like.

Gretchen, can you just use the buttermilk as a replacement for milk?  Is there anything it just wouldn't work in do you think?  I have so much of it now, would love to use it up.

Hi tarosuma. Ther are lots more on the forum who could better answer that question but I use it in lots of things including curries. Freeze in small amounts maybe in snack or sandwich zip locks  and stack it up in the freezer.  Just taste it and then think about the flavour and what it would work with. I am sure you will have more replies with lots of good tips. If you are making bread then you could use up a fair amount with that.

I use up buttermilk in bread, pancakes, waffles and the buttermilk syrup that is on here to go over the pancakes and waffles  ;)

I must admit Gretchen i am a very shy person and i dont think i would have the guts to wander up to a strangers place but hopefully i will meet someone and i can ask them if we can do some trading  ;D
I have been buying buttermilk to soak chicken in and for bread and scones and if it is reduced i buy it split in half or recipe quantities and freeze its great that you can freeze it!!
