Apricot Balls

Name of Recipe: Apricot Balls

Ingredients:

250 grams dried apricots
1/2 cup coconut
1/2 tin condensed milk
grated rind of an orange
1/2 cup brown sugar
coconut or caster sugar to roll

Preparation:

Mix dried apricots, coconut, condensed milk, grated rind and brown sugar for 15 seconds on speed 5.

Roll into balls and coat with coconut or caster sugar. Leave to dry out. Store in airtight tin in refrigerator.

LOL and dd2 proudly told me this evening that today she was able to pop one in her mouth and eat it whole. Worst part is I'm pretty sure I gave her one of the biggest ones today - I imagine it was not a pretty sight!
