If I can't use wine in risotto ?????

Hi all
Does anybody have any suggestions for a very tasty alternative to white wine?  My DH is sensitive to the preservatives or something that is in wine so am looking for something that will enable me to keep the risotto tasty.  I imagine risotto without white wine might be normally a bit bland ????

Hi tarosuma - I don't use wine in my risotto either - if you make up the chicken stock concentrate and use that, it's really nice - use a bit more than it says in the recipe.  It also helps it to have more flavour if you use a bit of chicken or bacon in your risotto, or if you want just mushrooms, use nice tasty ones, not just the button mushrooms. And add some parmesan at the end if you can. You can also add a bit of mushroom stock if you make that.  This is my recipe for chicken & mushroom risotto here.

If I don't have any white wine open I use verjuice. I'm not sure if that would have any nasties in it though. The verjuice I have from Margaret River has 220 in it.
May all dairy items in your fridge be of questionable vintage.

There are many organic preservative free wines on the market.  Also I have a friend who only drinks French Champagne which  (she says) preservative free. Mind you I would not drink French Champagne even if it was free. Well OK maybe if it was free. I think we make some wonderful Sparkling wines here which are great.
