Beer Chicken

Serves: about 4-5 and so EASY

Ingredients:
120g onion, quartered
2 cloves garlic, peeled
120g red capsicum, big chunky pieces
100g tomato, seeded & diced
50g EVOO
1kg chicken, diced (eg. thighs)
230g beer
salt to taste
white pepper to taste

Preparation:
Place onion, garlic, capsicum, tomato and olive oil in the TM bowl, 5 seconds, Speed 5.
Saute 7 minutes, 100o, Speed 1.5.
Place butterfly in bowl, add diced chicken and saute 3 minutes, 100o, Speed Soft  ^^
Finally, add the beer, salt and pepper and program 20 minutes, 100o, Speed Soft  ^^
(if its starts to bubble and spit, remove MC and place basket on top).

To check the chicken is cooked, prick with the tip of a knife and
otherwise schedule for 5 minutes at the same temperature and speed)

To Serve: with mashed potatoes / rice / or chips etc

Tips/Hints:
I used chicken wings, segmented but possibly the diced thighs would be better.
Doesn't matter what sort of beer.

Terrific recipe CP! I'm new to this forum but you're fast becoming my favourite thermochef! Does it matter if I used gluten free beer in this recipe?

You know what thats the first time I have ever heard of GF free beer (not the first time for my DH tho apparently) - but I don't see why it wouldn't work as you are wanting the beer flavour and the alcohol just cooks off. Give it a go and let us know  ;D
