Simple to make, quite tasty and no-one would know it was parsnip soup. Did the taste test at the end, mmm lacking in something so Tenina's garlic paste to the rescue - 1 heaped teaspoon, another blitz and yes, perfect.

I made this for dinner tonight. A very quick, easy & tasty meal. It was quite sweet, but parsnips are sweet so not unexpected.
I followed Judy's tweak and added some garlice paste.

Yes I use the chicken stock recipe from MWOC. I cut down the amount of salt, froze it in ice-cube trays & then transferred it to a ziplock bag. I prefer to keep my stock frozen, that way I can keep it longer & always have some at hand.

I'm like you, mcmich. I love parsnips. We made this soup for dinner tonight and found it delicious - so smooth. I was lucky as we had fresh chicken stock, after making Healthy Roast Chicken from
Devil of a Cookbook
yesterday. So didn't feel the need to add anything else to give extra kick as the flavour was so rich and lovely.

I made this today, a few tweaks - I never chop onions as long as the recipe say - 2 seconds on speed 5 is always enough. I added the spices to the onions and fried them as I like my spices fried off. I didn't have quite enough parsnips so added one sweet potato to make the 5oogms. The soup was very thick so I added another 100gm water at the end before the creme fraiche. Soup was delicious although spices were very mild i think I will try adding a little chilli next time.
