Fetta recipes
« on: January 12, 2012, 01:12:32 pm »
I bought a kilo of fetta the other day but I can't remember what I was going to use it for :-))

So I thought I'd ask you lovely ladies for some ideas.

I also remembered you mentioning that Tenina's dinner spinner app has a fetta tart. Does anyone know if that is in the lite version of her app as I can't download the app yet as it's not on ipad and i don't have the iphone. If it is in the free version can someone post it or pm it to me otherwise any great recipes you've tried and recommend would be appreciated.

I have fetta with my lunch salad as protein. Hally as just put up a meatballs recipe using fetta.
Here is a dip using fetta.
This risotto of Kathryn's is lovely too.

If you do a search using fetta or feta you will probably find lots more too.

You could use it in Gozleme, or it is good on just normal pizza too.

Tenina's tart was very nice - my DH is not a fan of fetta though so he wasn't a fan, but I have ideas one a DH styled one with bacon.  Anything with bacon is a winner with him!

Tenina also uses fetta in her nachos recipe.  Though watchout for the cayene pepper - DH requested I dial back on the 1 Tbl to 1/2 Tbl next time - he had his with normal grated cheese.

It is lovely tasting and visually sprinkled on the top of beetroot salad.

Had dinner last night at a good perth restaurant. I orderded porcini & sweetcorn rissoto with feta. The risotto was fab, the feta was added to the risotto in slices at serving, delish.

We like it on salad when it's fresh, I think it might freeze OK if you only use it in cooked dishes later?  We like it with cooked spinach with lots of lemon & garlic so it's just melting.  And like others say always great in a risotto, quiche or frittata.

If you need to store it for a while cut it into cubes and cover with fresh water. The deli where I buy mine said it would keep very well if you changed the water every other day. I have kept it for up to a month this way.

That sounds lovely Hally. I love Cocos.

I like to eat feta as it is, straight out of the packet or container. Very naughty. ;)
