The timer on the Thermomix only goes up to an hour, doesn't it?? Anything taking longer either means it is for a slow cooker or the oven/stove, surely?? Are you trying to use an unconverted recipe, maybe?

Its just what I do when I cook napolitana sauce or bolognese
napolitana sauce 2 hours
bolognese sauce 3 to 4 hours

Definitely don't have to cook that long in the Thermomix. If I want to do a nice bolognese sauce or ragu I sometimes use my pressure cooker instead for about 30-40 minutes which I think gives as good as result, if not better than slow cooking for 2-3 hours. The only reason I go for the pressure cooker is that I can cook up a larger quantity of sauce than in the Thermomix especially if I am expecting a hoard of hungry teenagers to descend on the household.
