This is a super easy cake (even easier now the Thermomix!). I make it at least once a week for lunchboxes.
Ingredients1 1/2 cups self raising flour - 210 g
1 1/2 cups sugar - 330 g
3 tablespoons cocoa - 20 g
2 eggs
3/4 cup milk - 180g
180 g warm melted butter
MethodPut oven on 180 degrees.
Melt butter in microwave and put aside.
Blitz 1 1/2 cups sugar in
for about 4 seconds on 7.
Add rest of ingredients to
don't forget butter in microwave and
for around 5 seconds on 6/7 till combined.
Pour into 20 cm tin which has been well greased and floured (I just use a silicone tin with spray oil!).
Bake for 50-55 minutes.
We normally eat it without icing but you could ice with lemon or chocolate iciing.
