Hi there thermomixers!
I've got a competition for you: who can give me the yummiest recipe for family dinner tonight, using primarily a large tin of tuna in oil and other pantry ingredients?! I've got pasta shapes and also angel hair pasta.
I've also got a punnet of cherry tomatoes and about 200ml of whipping cream.
Please help, and I hope it is a bit of fun for those of you who are super-clever and experienced.
(Please note that I can't feed my lads chilli!
)
(Also note this is like an ABC competition - the prize is the satisfaction of winning
)
Thanks,
Miss G

Miss G, my mum always made a tuna casserole which I loved. My kids won't eat it (nor my DH) so I haven't converted it yet but the basic recipe is as follows.
Cook some macaronni or spiral pasta as per packet instructions.
Saute a diced onion and a chopped clove of garlic in some olive oil. To this add a tin of asparagus spears, a tin of condensed asparagus soup (or mushroom or chicken and mushroom or celery or whatever you have), the tin of tuna, the pasta, and some cheese sauce (could easily use the Bechamel with cheese from EDC) and extra grated cheese to taste.
Mix it all up until all ingredients are cooked through and serve with rice.
You could easily add your cherry tomatoes, and you could probably replace the soup with the cream and some vegie stock paste. I have also added celery before.
Given my decision to include more oily fish in our diets I might try them with this again...
Cheers,
Kerryn

Hi Kerryn,
Thank you for your recipe. That sounds great, and the idea of making a casserole without putting the oven on in this 30oC heat definitely appeals!
Extra points for chef-comfort.
best,
Miss G.

P.S. I've also got a small bunch of fresh parsley and a large bunch of fresh dill

I love this one which Trudy gave me missgrunge - you can replace some items with whatever you have.

I make a Canned Tuna Casserole often.
This is what I do:
Make a basic white sauce in the TM (recipe from the EDC- Bechamel Sauce)
add a drained can of fish, a can of corn and diced onion. (you can do the onion in the TM first and set it aside if you like.
pour it over cooked pasta in an oven dish and top with cheese. Bake in the oven until cheese is golden (about 20 min at 180)
Sprinkle cracked pepper over each serving

You probably have eaten by now but if you had spuds you could have made fishcakes.

I would do and have done tuna carbonara with the angel hair pasta
Just with tuna and eggs, cream is optional.
Always save same of the cooking water to add if the pasta is too dry
finish off with evo

I have not converted this recipe for the TM
You can cook the pasta in the TM bowl
Pasta 500g
Garlic to taste
Olive oil to cover the bottom of lager frying pan (any oil is ok to use I use evo)
tuna 425g
eggs 3
Cream optional
Parmesan optional
black pepper to taste
while the pasta is cooking lightly fry garlic in olive oil in a larger frying pan.
Add drained tuna and toss a few times turn heat off.
When the pasta is cooked add to pan, stir well. Add eggs and stir again until eggs are just under cooked I do this last step with no heat you can add cheese, cream and pepper at this stage
I always keep ½ cup of the cooking water, if pasta looks a bit dry just add a little of the cooking water
You can replace tuna for chicken, salmon or vegetables
Add garlic to cold oil

I sometimes cook tuna with pasta inspired on a recipe someone put on the Portuguese forum.
Boil the pasta on the Thermomix and save.
Chop an onion (size depending on the quantities you're making) on the Thermomix, then add some olive oil, seasonings at taste and a bit of tomato pulp (if you like). Cook for 7 m, 100º
.
Add the tuna very well drained (I prefer tuna canned in water, less fat there) and cook for a few minutes
.
Add natural yogurt cook for a few more minutes then add the pasta just enough time to get it warm - if you have kept it warm or cooked it on the side, you can just add the tuna mix to the pasta and stir, the pasta will break a lot less.
The times used vary with the quantities, I cook this just for me and after adding the tuna each step takes about 2m each.
