pumpkin and lentil soup

pumpkin and lentil soup from the first CSIRO diet book

serves 4/5

Ingredients
1 onion-quartered
2 carrot-chopped
small chunk sweet potato-chopped
600g ptoato-chopped (I'm gonna try skin on next time not sure how it will change the flavour)
80g red lentils
500g water + 2 dollops of veg consentrate
few teas curry (taste depending)
1teas cummin
1/2c skim milk powder
2 teas sugar


Preparation

grind spices.
cook onions, 2 mins 100 speed 1
add chopped veggies,  lentils, spices and water + concentrate and cook 15 mins 100 temp speed 1.
once its tender (i stabbed mine to check) blend slowly turning dial up to speed 8 for about 10secs
with blades moving on speed 4 add milk powder and sugar

use more or less water depending how think u like it. i like mine thick?

Wow 3 recipes since the end of December - you are going great guns miss thermo.  Looks like we can expect a lot more coming from your camp.

its never to hot for soup, and if by chance it is i just crank the air lol..... I'm a little calorie conscious, so the fact i love soup is a bonus

Actually Miss Thermo, even though I TIC queried your soup habits up there in the hot, we also do have a lot of soup all year round, hubby grew up that way and it is great diet food for him.

PS: Did you leave out the Pumpkin in error Ta.

ooo hope u enjoy it... soup is great diet food..... i stick my left overs in the freezer in portion sizes for 1.... quick easy lunch when im lazy an starving..... dont have much left overs as my kids are discovering they like my creations as well. i have to rename alot of my soups for one of my boys.... veggie soup is carrot soup an he loves it.... he even told me not tell tell him whats in it ;)

I've left the potato skin on when making soups and it's BARELY discernible - it is there, but only because you know it's there.

Well I could not find where I had left my pumpkin.... ROFL.... found it now, so I used potato and capsicum and extra tomato, anyway it was all good can't go too far wrong with soups.

im hearin ya.... my fridge is like the big black hole lol

i left the skin on my pumpkin in something i made just recently... tasted fine, couldnt tell either.... all the stuff i have been getting my family to eat since getting my new mate is crazy!!!!! hahahahaha
