Erin I do snacks for the week each weekend. Muffins you could do a double batch which would last a good couple of weeks for yours.
Main meals any of the casserole/curry type dishes freeze well, as does bolognaise etc. I find that I can do most things (along with a rice cooker/microwave) in well under 30mins on a week night anyway so I don't bother freezing unless I have extra leftovers.
But a big batch of bolognaise is good to then make spaghetti/shepherds pie/lasagne/moussaka type recipes quicker.
A big portion of stroganoff/curry etc would make good freezer meals.
A lot of the TMX meals make so much sauce that you can freeze some of it and add more meat later, or add more meat and have extra portions.
What about burgers (as Nik said) or other flavoured minced meat to make sausage rolls etc
Beef stew to make into pies quickly.
I've never been a big meal freezer - never premade and froze a meal before any of the kids were born either, lol, I just find you can make many meals so quickly and just do the quick ones (20mins) when short of time and leave the longer meals for when you have time.
Though I am going to pull my slow cooker out and try to use that again for the nights we are back really late. (though I fried the UK adapter yesterday on the portable aircon unit, grrrr)
