Oven Baked Fish and Potatoes (with photo)

I am writing a very simple recipe today, so simple that I was undecided about posting it or not.
I won't be giving exact amounts for this one. This is one of my mother in law's popular fish cooking ways
Ingredients:
15g parsley leaves (You can use more or less parsley depending on fish and potato amount)
1 clove of garlic
Fish fillets
Potatoes (2-3cm chopped)
Salt
Bread crumbs
Extra virgin olive oil
* Chop parsley and garlic for 7 seconds on Speed 7
* Season fish fillets with salt and then coat with parsley-garlic mixture. Place them in a tray covered with baking paper
* Season potatoes with salt and then coat with the remaining parsley-garlic mixture. Transfer them into the tray
* Sprinkle fish and potatoes with bread crumbs. Drizzle with olive oil
* Bake in the oven at 180ºC for 30-40 minutes until browned

Obbie - It was so lovely. I cooked for my Mum and Dad too, and they loved it too. I used Spanish Mackerel. Thank you Farfallina.
CP - It's really nice with a squeeze of lemon over the fish too.

they say the simplest dishes are the best as their arent too many flavours trying to overpower each other...i know several chefs who have this belief..keeping the ingredients to a minimum and not mixing too many flavours..saying that fish can be very bland...might try it out on the bbq in a few weeks

Simple is good farfallina - sometimes we are rushed to get a meal on the table for our families. This looks really good though so will be on the pile to try ASAP.

You are right
Sometimes we wrongfully think like the more complicated it is the tastier it gets
I hope you all enjoy it

We have a policy in our house KISS. It means Keep it simple stupid. Farfallina this recipe certainly follows that and it sounds really delicious.

I use this everyday in my business. What it boils down to is: most times we give long winded replies to queries when quite often we have read more into the question and need to keep the reply extremely simple. This long winded reply then reads: KEEP IT (your answer) really SIMPLE for STUPID idiots. Works like a dream if you assume the world does not catch on quickly - and they don't - so make sure that you are not intrepreted (ahhhh! where is the spelling on my DD's computer?) the wrong way in a shortened message to sound abrupt.
