I missed the egg free too sorry  :-)) I make them with out the egg, can use more breadcrumbs and a splash of milk or yogurt to bind them instead and then I use either milk. yoghurt, buttermilk, anything that is moist to dip before coating. Hope this helps  :)

Thanks Ladies,
 i think i'll just have to experiment. maybe if i find a non-tmx recipe someone may be able to help me convert the recipe?!? I've not done that before, i'm a newbie!

p.s. I like this one because it is already cooked when you fry off the crumb coating so really quick and easy. I freeze them ready to fry for last minute meals.

both!!! depending on how I feel lol.

With out the coating you need to freeze them flat with something in-between the layers to make it easy to get apart. If they are crumbed it isn't so bad  :)

i just thought crumbed you would need to cook without defrosting otherwise the crumb would become soggy?? and if cooked straight away it wouldnt be heated right through before the outside is browned??

The favorite 'nuggets here are just:

Chicken diced
A bowl of flour, a bowl of milk/yoghurt (you can add some egg replacer if you want),
and a bowl of Red Rock Deli plain chips, parsley and some garlic powder, blitzed to a crumb in thermomix.

roll in each one, in each step, spray with oil, and bake.

They are beautiful!

Have you tried the chicken nuggets from Annabel Karmel's 100 top finger foods?  They are absolutely delicious.  The only use of egg is in the usual flour, egg, crumb process so if you can somehow crumb them without using egg then they would fit the bill.

Chookies KFC chicken crumb has buttermilk and I use small chunks of breast so they are like nuggets

I just added a recipe my kids love in Babies and Kids section if you are still interested - very quick, easy and healthy. :D.
