Tarlets or mini tarts???

What is your favorite way to make the crust for Tarlets or mini tarts?  I LOVE the lemon filling for the big lemon tart everybody makes, with the shortbread crust.  But I want to do little mini lemon tarts and I've tried several crusts that didn't work.  I tried doing the shortbread crust in mini muffin tins, but it takes hours to pat the dough in and around each one.  Then I tried rolling out pie dough and cutting into circles and molding into mini muffin tins, and they came out so thick there is no room for lemon filling.  Any other ideas??  Thank you!!!

Hi Joyce,

I'm rather lazy and therefore partial to the crushed granita biscuits with melted butter type base.  Can't see why it wouldn't work with mini tarts?

Tenina has a great one on her website - just search for EVOO lemon tart - my favourite!

Hi Joyce, the baked lemon cheesecake recipe from this forum is delish and it has a very easy biscuit base that works well.

I've made the pastry from this Lemon Tart Recipe and is found it very easy to work with. :)

If u can buy  brandy snap cookies in Canada, why not try this very easy method


Pre-heat oven to 180°C

Place biscuits over each hole of a twelve hole, shallow patty cake pan. Bake for 2-3 minutes or until soft. Remove from oven then carefully press softened biscuits into pan to mould into a cup shape. Allow to cool then fill
