Dough is sticky
« on: May 24, 2011, 12:52:59 am »
I have had my Thermomix for over 12 months and before that a Kenwood chef and a couple of bread machines, so I have been baking bread for a long time, for the last couple of weeks I have been following my favorite recipes as usual but the dough has been coming out sticky. I use Aldi Plain flour that I have had previously had great sucess with.....could they have changed their flour ? I realise I have to adjust my quanties but was wondering if  anyone else experienced this ?

It is probably the batch of flour Dee. It can change from year to year. somewhere on here there is a discussion about it, I am sure it was Andie that gave us all the info. I will see if I can hunt it out for you. I don't think it is anything to be too alarmed about, just painful that you need to play with a tried and tested recipe  :-\

Will see if I can weave some of JD"s magic and find that thread for you  :D

Just to follow this up.... I asked a TM friend  if she had had the same problem and she hadn't until this week when she had sucessive bread making failures, I rang Aldi to see what was happening with it and they are aware of the problem and are putting it down to the QLD floods and the moisture level in the grain has effected the gulton. They will refund anyone with the problem. I think it is hit and miss on the batching I have had some packets fine and some shocking...even some that the dough has been fine but then after cooking it is all gluggy in the middle of the loaf. I have no problems with cakes and cookies with the flour. So I am going to change to a different flour for bread making for a few weeks then try the aldi flour again.
Hopefully this may help someone else with the same problem.  :(
