Pumpkin & Sage Pasta sauce

This is the pumpkin version of Farfallina's beautiful and easy  "Zucchini cream sauce"  http://www.forumthermomix.com/index.php?topic=3706.0

Fresh Sage Leaves
Heat a little olive oil in fry pan, and on low heat, fry both sides of sage leaves until deep green in colour & crisp.
Drain on paper towels, and set aside for topping the pasta.


Pumpkin & Sage Pasta Sauce

350g roughly cubed pumpkin (I used butternut)
40g parmesan cheese (grated first in TM) then set aside
30g Olive oil
2 cloves garlic
120g milk
1/4 tsp ground sage
1 tsp salt flakes


Grate parmesan on speed 9  & set aside.  Chop pumpkin and set aside.
Pour olive oil into jug & add garlic cloves.  Warm for 2 minutes, 100c, speed 5.
Add pumpkin.  Cook 10 minutes, 100c, speed  :-: 1
Add milk and 1/4 tsp. ground sage.  Cook for 10 minutes, 100c, speed 1.
Add salt flakes, and the grated parmesan, and blend for 20 seconds, speed 8.
Mix in a  little of the pumpkin sauce with the pre-cooked pasta, drizzle extra sauce on top, then crumble the cooked fresh sage leaves on top.

I added baby spinach in with my pasta, and let it wilt together in the  thermoserve for 5 mins.
The pasta I used was spinach & ricotta agnolotti.

That looks delicious, Maddy.  Pasta is on my menu this week, but I think I'll have to expand my planned meals to include this one - which means I'll be expanding my waist, hips, thighs, etc. as well.  Ah well, what can we do????
