Peanut Plum and Oat SliceIngredients225g plain flour
100g butter
110g caster sugar
60ml cold water
175g coarsely chopped roasted, unsalted peanuts - do this in the TMX. Take care you don't turn them to peanut meal.
60g rolled oats
60g butter
160g plum or any jam
PreparationBlitz the peanuts and set aside.
Heat oven to 200
C.
Grease and line a 20cm x 30cm tray.
Place flour, 100g butter and 1 tablespoon of the sugar in the bowl. Mix until like breadcrumbs.
Add water and
until it comes together.
Press into tray and bake for about 15 minutes.
Melt butter in bowl, add peanuts, oats, and remaining sugar. Mix on
until it is combined.
Spread the base with jam and sprinkle with peanut mixture.
Bake for about 20 minutes. Cool in tray before cutting.
