Pistachio and Milk Chocolate Cake

Pistachio and Milk Chocolate Cake
Cuts into 16 squares
Ingredients
140g shelled pistachios
200g milk chocolate broken up
150g raw sugar
200g soft butter
3 eggs
200g SR flour
100g milk
150g sour cream

Line a 20cm square tin. Turn oven to 1800C.
Place 125g pistachios,75g chocolate and half the sugar in the bowl.Pulverise 10 seconds, speed 9.
Add remaining sugar, butter, eggs, flour and milk, plus a pinch of salt. Speed 5, 20 seconds.
Scrape into the tin and bake for 35-45 minutes.
To ice
Melt remaining chocolate (see EDC) and then stir in the sour cream. (a few seconds only)
Cut cake in half horizontally and spread a little of the icing over. (I didn't do this)
Then ice the top with the rest of the icing and sprinkle the remaining pistachios over the top.

Comments
This was very easy to make and lovely to eat. It could be eaten as a cake or a dessert. It is adapted from a recipe in the April 2011 edition of BBC Good Food.

johnro - thank you Cookie, both icing and cake tasted great in the raw state. I pulverised whole amount of sugar with choc and pistachios and melted choc in microwave then stirred sour cream through.

Oh Cookie1 thats fantastic. Love pistachios and white chocolate. Pity we are trying to watch our calorie intake.

I am too Jan. But I still had 2 pieces. It was so easy to make. I'm going to try it with almonds next time. I was really impressed at how easily the TMX chopped hard choclate, and the pistachios into a fine powder.
May all dairy items in your fridge be of questionable vintage.
