Caramel and Coconut Slice

Caramel and Coconut Slice (Converted from Taste.com.au, Source T.Miller)

Ingredients

75g plain flour
75g self raising flour
45g desiccated coconut
110g caster sugar
100g butter
395g can sweetened condensed milk
80g golden syrup
55g brown sugar
60g butter extra
2 eggs
75g caster sugar
180g desiccated coconut extra

Preheat oven to 180C. Grease a slice pan and line base and two opposite sides with baking paper, extending paper 5cm over edge of pan.

Place butter in TM bowl and melt 2min 60c speed 2.
Add flours, coconut and sugar, combine 15sec speed 3.
Press mixture evenly over base of prepared Pan and bake 15 minutes or until lightly browned, cool slightly.

place extra butter in cleaned and dried TM bowl melt 2min, 60c speed 2, add condensed milk, golden syrup and brown sugar. Mix 20sec speed 3. Spread mixture evenly over base. Clean and dry TM bowl.

Add eggs to TM bowl and mix 2 seconds speed 3, add sugar and coconut mix 20 sec speed 3. sprinkle over filling then bake further 20 minutes.

Allow to cool completely in pan, slice into squares to serve.

Thanks for the conversion Dede - I have a very similar recipe but had not done any conversions, but also had not cooked it since owning thermie!!!!  :)  :)
