Curry Coconut Cauliflower Soup

Curry Coconut Cauliflower Soup

half a large onion peeled
half a cauliflower broken into florets
one leek end cut off and chopped into 2cm segments
30g ghee
1 tblsp TM stock base
1/2tsp curry powder
600 ml water (reduce if you need to depending on amount of cauliflower)
1 can coconut evaporated milk
1/2 tsp salt
a good shake of tabasco sauce


Place in TM31 chop at speed 7 for 4 seconds
Add ghee and cook at 100 deg speed 1 reverse for 2 1/2 minutes
Add cauliflower followed by all other ingredients

Cook at 100 deg speed 1 for 20 minutes

Blend for 40 seconds on speed 8
Taste and adjust seasoning

Serve with crispy buttered toast

What a lovely recipe - I especially like the addition of the coconut milk - mmm. ;D
