Can you help with Soy & Dairy Free Icecream Recipe?
« on: August 03, 2011, 01:51:47 pm »
I have just found a soy and dairy free icecream recipe which blends the ingredients and then says to add to ice cream maker and follow manufacturers directions for churning. Is there any chance I could make this in the TMX?? I have made my son yummy vanilla and chocolate icecream in the TMX and my poor daughter keeps missing out.  Any help would be appreciated!! Thanks. :)

Zbee, I'd love to see the recipe as my husband avoids dairy, but my kids love icecream. It would be nice to have a dessert we'd all eat.

A saw this on the failsafe facebook page, is supposed to taste pretty amazing! It's not converted though.

5 egg yolks
2 cups rice milk
1/4 cup caster sugar
vanilla (the recipe say 1tsp, I do about half)

Whisk egg yolks with sugar. Heat milk in saucepan till nearly boiling. Pour over egg mixture while whisking, then put back into saucepan. Heat gently while stirring until it just starts to thicken (before you get scrambled egg). Remove from heat and add vanilla.

Thanks, LeeJ. I might try that out with coconut milk instead of the rice milk. It would probably be delicious!

Here is the recipe for Creamy Vanilla Coconut or Banana Ice Cream.

Ingredients:

1 can full fat coconut milk
1/2 cup minus 2 tbs maple syrup or 1/4 cup agave
4 tbsp alcohol free vanilla
1/2 cup rice milk or other milk substitute
1 teaspoon guar gum (the original recipe doesn't call for this but they think it improves the consistency)
2 ripe bananas (optional)
1/3 cup finely chopped cashews or other additions (optional)
Cinnamon to sprinkle on top (optional)

Directions:

1. Combine all ingredients in a blender.
2. Blend thoroughly.
3. Add to icecream maker, following manufacturers directions for churning.
4. For soft serve icecream, eat immediately. For harder ice cream transfer to an airtight contact and freeze for several hours to a day.
5. Enjoy!

If someone is able to convert this recipe I would be forever grateful!! :-))

Thank you all for your responses!  :)

That's nice and easy  :)

POP everything in thermomix, writting down measurements as you go for next time. I'd gradually turn it up to around 8 for a minute or so to get everything nice and combined.
Pour into a container, or ice cube trays (easier to POP back in thermo), and freeze for 4 hours, then reblwnd as above until smooth.
POP back in freezer, and should be ready to eat several hours later :)

Thanks Zbee & LeeJ. Will give this a try. Spent yesterday converting a Charmaine Solomon ice cream custard base, but I don't think I've quite got it yet.
