Chicken Taco Filling

Name of Recipe: Chicken Tacos
Number of People: 4
Ingredients:

1 cup cheese (extra for serving)
half an onion
half a green capsicum, sliced
1 tbls olive oil
500g chicken thigh fillets, diced
1 cup chunky salsa
1 cup corn kernels


Preparation:
Grate cheese, spd 8 10 sec.  Set aside.
Add onion to bowl  *:. Chop for 3 sec spd 5.  Add sliced capsicum and oil.  Cook 5 mins 100 degrees  :-: spd 1.
Add chicken, cook 7 mins 100 degrees  :-: ^^ .  Drain liquid and set aside.
Add cheese, salsa and corn to bowl  *: . Melt and mix for 4 min 100 degrees. Add chicken mixture, stir through  :-: spd 1.  If necessary heat through for 1 min 100 degrees  :-: spd 1.

Put cooked chicken mixture into cooked taco shells, top with salad and enjoy!!

it is very easy and quick but really tasty!  it worked well tonight as i was too tired to fuss to much for dinner
