Fructose and sucrose intolerances

We have just discovered that our DS7 (and probably DD2) are fructose and sucrose intolerant. I saw the Dietitian today and we have a list of "OK" and "not OK" foods and will be on a strict diet for a couple of weeks, followed by some time "challenging" individual foods. This is all new to me and quite daunting!
Does anyone have any good recipes / links / experiences to share about these intolerances? Good news is wheat and dairy are OK!

Can they eat carob?  I have just discovered some new carob syrup which is pure carob - nothing else - and very sweet.

Not sure I will look into carob.

Just realised my veggie and chicken stock paste is out too - onions/tomatoes/carrots on the 'out' list for now. Help!!! Any way of making stock without these basics? Do you think celery, zuchini and garlic are enough???

I feel like it will be a long road ahead. But said to DH "thank goodness for thermie" as we chowed down on pasta with cauli and awesome cheese sauce... all on the OK list.
