Tweaking details: I only made half quantity, and had to substitute galangal with ginger, and celery and spring onion with a leek.
Review: I found this had enough flavor to eat as a stand alone dish for lunch at work and was enjoyable enough cold. It did go a bit 'gluggy' though, but I'm not familiar enough with quinoa to know if this is a characteristic of quinoa generally or this recipe specifically.
Score: 4 out of 5 - not outstanding, but I'll probably come back to it again.
