Smoked Salmon and RisoniServes 6 wellIngredients500g risoni
2 x 180g smoked salmon portions
1 tablespoon EVOO
1 packet spinach, coarely chopped
1 garlic clove, crushed
60ml lemon juice
2 shallots, finely sliced
200g ricotta
MethodCook pasta,according to EDC, taking care to not overcook it.
Flake salmon and put into thermoserver. Add oil, spinach, garlic, lemon juice and shallots.
Put cooked risoni over and stir well. When serving add a dollop of ricotta.
Serve
TweaksI did the full recipe and we ate it all weekend. Perhaps some chopped capers could be added.
