Oatbread with Dates, Apple, & Orange

Adapted for my Thermomix from The Inn at the Crossroads.  I also used their Candied Orange Peel recipe (not adapted at this point, welcome to suggestions!).

Name of Recipe: Oatbread with Dates, Apple, & Orange

Number of People: Makes 2 medium loaves.

Ingredients:

130g rolled oats, quick steel cut oats, or a combination thereof
500g bakers flour
10g dry yeast
50g honey
1 tablespoon salt
50g butter, room temperature
380g hot tap water (120-130°F)
60g roughly chopped dates
60g roughly chopped candied orange peel
60g roughly chopped apple
coarse oats for topping (optional)

Preparation:

Measure the water, yeast, and honey into the TM bowl.  Mix for 2 minutes, 37C, speed 3.

Add the oats, flour, salt, and butter. Knead  :: for 2 minutes.  Add fruit, then knead  :: for another minute.

Place the dough in a greased bowl and cover with a clean tea towel. Put in a warm place until it has doubled in size (about an hour). Punch down and divide into two equal pieces.  Shape into round loaves and place on a greased baking sheet.  Wet the top of the dough with a little water, then either sprinkle with rolled oats, or dip the top of the dough into a plate of oats. Using a sharp knife, score the tops of the loaves in an X shape.

Allow to sit until they have doubled in size again (about another hour). Bake in an oven at 200°C/180°C fan-forced for around 30 minutes, or until the loaves are golden brown and sound hollow when tapped.

Tips/Hints:

I think you could also use other candied fruit (like ginger, which I might try when I run out of orange peel).  I used dried apple as I had some in the cupboard but fresh apple would also be fine.

You could use oat flour for a portion of the bakers flour by whizzing up some oats first.

If your dough isn't rising satisfactorily or it's a cold day, you can sit the bowl on a warm wheatbag for a bit of extra oomph.

Delicious just with butter, but I also think it would work well for a sandwich such as ham and cheese, although I haven't tried that yet.

Is it 1 Tablespoon of salt?

Yep, you need the salt to help the flavours to develop.  It doesn't taste overly salty, to me.  You could try reducing it but in my experience bread needs plenty of salt  :)

No, not moist.  The texture would be similar to raisin toast, I suppose you could say.  Not overly dry thanks to the fruit but not especially dense and chewy either.
