Tuna Stuffed Mushrooms and Peppers (with photo)

Tuna Stuffed Mushrooms and Peppers

Ingredients:

600g big sized mushrooms such as portobello (My 6 muhrooms weighed 600g)
300g green, yellow and/or red pepper
40g parmesan
5g parsley leaves
2 anchovy fillets
5g extra virgin olive oil
150g canned tuna, drained  (1 can = 240g)
50g green olives
40g bread crumbs (I used 20g bread crumbs, 10g wheat bran and 10g oat bran, just for an healthy touch ;) )
Fresh lemon juice


Preparation:

    Grate parmesan for 10 seconds by speeding up from 2 to 10. Set aside.

    Grate parsley for 5 seconds on Speed 7.
    Break off very gently the stems of the mushrooms. Add stems and anchovies in TM Bowl, chop for 1 seconds on Speed 5.
    Scrape down the sides of TM Bowl, add oil and cook for 10 minutes at 100ºC on Speed 1. (In the meantime keep mushrooms in water - lemon juice mixture to prevent discoloration)
    Add drained tuna, olives, bread crumbs and 25g of the grated parmesan. Mix all for 10 seconds on Speed 4.
    Cover baking tray with baking paper and brush wit a bit oil.
    Cut peppers in half lengthwise, remove the seeds.
    Stuff mushrooms and peppers with tuna mixture. Place in oven tray. Sprinkle with parmesan and drizzle with a bit of olive oil.

    Bake for 50 minutes at 180ºC. (At the end of 30th minute pour 1 Measuring Cup of water over the veggies in the oven and continue to cook)

    Cook for another 5 minutes with grill if you think it's needed.

Yes I agree but one part of the recipe does intrigue me farfallina and that is the soaking of the mushrooms.  In Australia we are told not to wash our mushrooms, just wipe them over with a cloth so actually submersing them in water is foreign to me as ours don't discolour in the short time we are speaking here.

I didn't think it was this common over there.

Well.. I am not an expert so I don't know if what I do with the mushrooms is acceptable even if there are many people who do it. Nevertheless there might be some "learned" mistakes sometimes.

I feel uncomfortable to wipe them only though. I read that method in a magazine, I tried it and I felt like they were still dirty.
But no doubt it is the method which is more accepted culinarily

My personal preference is to wash the mushrooms anyway since there is lot dirt on them and it is kind of sticky and it just makes me uncomrfortable

After your message, I checked better on web about the reasons for not washing, they say to avoid washing not to make them absorb water and lose their taste.

What you said made me think. Sometimes I do things habitually and don't think twice you know.
Next time I guess I try cutting away dirty parts, give a quick rinse, wipe with a towel and rub with a bit lemon juice maybe?
See? i can't let go off washing!  :D

Gosh farfallina, you just do what you want to - I was just pointing out that it is not common for us over here.  I don't find ours sticky at all and they wipe clean so easily.  Maybe we have different growing methods here.   :-* :-*

The mushrooms here are usually grown in special mixture I think. They really don't have dirt on them as such, possibly only a grain or two of the stuff they grow in and it's easily brushed off.
May all dairy items in your fridge be of questionable vintage.
