Lemon lime cheese cake
serves 10
Ingredients
1 packet marie biscuits
125g melted butter
500g cream cheese softened
3/4 cup of sugar ( I used raw)
1 lemon rind grated, then juiced
2 limes grated then juiced
3 teaspoons powdered gelatine
300ml cream
Blitz marie biscuits, speed 6 for 6 seconds
add melted butter for 6 seconds
Put in pie dish, chill
wash bowl / dry
add cream cheese, zest of lemons and limes
add sugar
Blitz on speed 6 for 10 seconds
heat about 1/2 cup of juice, and add gelatine, to dissolve.
( I did that on the stove)
add juice to cream cheese, and cream
blitz on speed 6 for another 10-12 seconds
pour over crumbed base and set in fridge
