Spinach Dumplings with Fresh Tomato and Herb Sauce

Spinach Dumplings with Fresh Tomato and Herb Sauce
Serves 4
Ingredients

2 x 250g packets frozen spinach, thawed
200g ricotta cheese
1 clove garlic
1 egg white
1 tablespoon flour
20g parmesan cheese
105g breadcrumbs
¼ teaspoon nutmeg
1 tablespoon chopped chives
Sauce
125ml dry white wine. I used verjuice
600g halved tomatoes
2 tablespoons chopped parsley
1 teaspoon white sugar
Preparation
Chop parmesan, and set aside. Then parsley and set aside. Then breadcrumbs and set aside.
For sauce put wine into bowl and bring to 100 degrees. Cook for 2 minutes.
Add tomato and blitz on speed 4 for 1-2 seconds to break up the tomato. Then cook for 10 minutes on Varoma with MC off.
Add in parsley and sugar at the end and stir in. If the sauce is not thick enough cook for a little longer.
For dumplings: Squeeze excess liquid from the spinach and add to bowl. Add ricotta, garlic, egg white, flour, parmesan, breadcrumbs, nutmeg and chives. Mix on speed 3-4 until blended.
Line the Varoma with damp glad bake and put walnut size dumplings in. Most of the dumplings will cook in one go. Add 1000ml boiling water to the bowl. Sit Varoma on and cook at Varoma for 10 minutes, speed 1.
Add dumplings to sauce in thermoserver



This recipe is adapted from one in The Women's Weekly Kitchen  book.

Did you serve that over rice Cookie?  Dumplings are another thing I have never made  :-))

No Judy, we actually had them like that. I had some leftovers cold for lunch today and I think they are better cold. :-\

cookie does the sauce taste cooked after only 10 mins ? or is it more like a fresh summer tomato sauce if you know what i mean

i don't need a recipe i'm italian

These look excellent!!! Will try these tomorrow. Looking for something to have with lamb chops which I plan to do in the oven now I have made the FOSMix. So, I make the sauce first, put in thermoserver then cook the dumplings cookie?

That's right sauce first, then the dumplings.

Uni the sauce isn't a rich one at all, it is very light. As I said they all tasted better the next day.

Yes Uni. Three of us had it as a main meal with soup and sweets. It makes about 22 dumplings.

WOW Cookie!!! These are amazing!! I didn't want to cook in 2 batches so I made 16 balls and froze the rest of the mixture for a lunch time snack :)  we had them with baked lamb chops and Bron's garlic steamed rice! Yum yum yum!! Will post pic tomorrow when I'm on the box monster. Never mastered uploading photos via this iPad :). Only change I would make next time is perhaps adding some fresh basil to the sauce and maybe more sauce. The rice soaked up a lot and I'm a sauce and gravy girl! I also used spelt flour not that you'd know there is so little in it.  Thanks for the recipe. Will be a regular :)

UPDATE - Uploading photo. Yes, they are lamb chops but the OH likes they basically cremated so they are a little over done! :)
