Tuna Curry

Tuna Curry - serves 4

100g leek cut into 5cm slices
Medium red onion, cut into quarters
1/2 red or green capsicum seeded & cut in half
60g apple, cored & quartered
1 tbspn olive oil
70g tomato, chopped
1 tsp curry powder or more to taste
1 cup chicken stock or 1 cup water & 1 tsp chicken stock powder
1 tspn snipped chives
small handful chopped coriander - use parsley if you don't have any
100g cream mixed with 2 tblspns cornflour - I've also used sour cream successfully
1/2 tspn salt or to taste
425g can tuna, drained and flaked
150g creamed corn (optional)
1 serving of Bron's steamed garlic rice or Chookie's  recipe Enough rice for the whole family

Place the leek, onion, capsicum and apple into the TM bowl and chop for 2 sec/speed 5.
Scrape the sides down with a spatula, add the curry powder and saute 5 mins/100o/reverse/speed 1.
Add the chopped tomato and chicken stock.
Cook 5 mins/100o/reverse/speed 1.
Add the cream and cornflour mixture and cook 4 mins/100o/reverse/speed 1.
Add the tuna, herbs & creamed corn (if using) and cook 3 mins/100o/reverse/speed 1.
Set aside in the thermosaver (or leave it in the TM bowl if you have 2 bowls) whilst you make the steamed garlic rice.
If making Chookie's rice, make that first.

Merrilyn - Made this last night and everyone thought it was delicious.  Didn't have a capsicum, but it was just lovely without.

Thanks Merrilyn, glad they all liked it.  You can keep a jar of roasted peppers in the fridge for moments like this when you don't have fresh. Just cut up a couple of pieces and add it with the tuna - do it by hand though, the TMX would turn it to pulp. I roast my own and freeze them but those in a jar are a good standby.

I made this again tonight and used Chookie's rice recipe this time http://www.forumthermomix.com/index.php?topic=9059.0.  I also added some leftover creamed sweetcorn and used sour cream instead of ordinary cream.  I've added these options to the original recipe.  I've frozen 5 individual ramekins with the rice topped with the tuna curry.
