I have a sourdough starter...... but need help!
« on: November 23, 2011, 03:25:07 am »
Hi everybody
A lovely lady gave me some of her soughdough starter and I am keen to attempt a TM sourdough.  But I am clueless!!!
I have never made a sourdough loaf before, I could never get past the making the starter part!   ;)
Anyhow, I have a lovely looking blob of dough in my fridge at the moment......... what do I do with it?!!!!
I think Chookie has lovely volunteered lots of sourdough info before and I am sure there are others out there who know what they are doing!   Can somebody please help me?  I don't want to kill this one and I am desperate for a good loaf!

Tarosuma,  put it in a clean glass jar feed it with equal parts of filtered water and bread flour.  Leave it at room temperature until it forms bubbles on top,  then feed it again and leave on kitchen bench for a couple of hours,  then into fridge.  Depending on size of 'lump'. about 1/2 cup of each water and flour.
Filtered water is very important as chlorine will kill it.

When you want to use it,  remove from fridge and feed again.  It will take 7 hours to come to room temp and start working.  After this you can use it.  when you remove some starter,  feed it again and put in fridge.

There are several recipes for using it on the Forum,  also on my blog.   Good luck and ask for help if needed.

I should have added that when you feed it,  give it a good stir,  and it should be like thick pancake mix.  GOOD LUCK
