Here's a yo-yo recipe I converted from a recipe in the Australian House & Garden 'Just Desserts' 2010 Calendar (this recipe is also online).
Name of Recipe: Vanilla yoyo biscuits
Number of People: Makes 25
Ingredients:
Biscuits
• 1 C plain flour (150g plus 50g extra if required)
• 1/4 C self-raising flour (40g)
• 1/2 C custard powder (70g)
• 175g butter, at room temperature
• 1 tsp vanilla extract
• 1/2 soft icing mixture (80g)
Filling
• 1 1/2 C pure icing sugar
• 40g butter, at room temperature
• 2 tsp vanilla extract
• 1/2 tsp lemon juice
Preparation:
1. Preheat oven to 200°C (180°C fan). Line two baking trays with baking paper.
2. Place flours and custard powder in bowl and mix on speed 1 to combine. Remove from bowl and set aside.
3. Soften butter if required (40 seconds at 50°C on speed 4). Place butter, vanilla and icing mixture in bowl. Beat on speed 4 until pale and fluffy. Add flour mixture; mix on speed 1 until just combined, then beat on speed 4 until smooth. Add extra flour to form dough if required.
4. Roll a rounded teaspoon of dough into a ball and place on prepared trays. Lightly press down with a fork. Repeat with remaining dough. Dip fork in flour if required.
5. Bake for 10-12 mins or until just browned. Stand for 5 mins then remove to a rack to cool completely.
6. Meanwhile, make filling. Place icing sugar and butter in bowl and mix on speed 4 until pale and well combined. Add vanilla and lemon juice; mix on speed 1 to combine. Beat on speed 4 until fluffy. Sandwich biscuits together with filling.

Tips/Hints:
These are really yummy so they won't last very long
If you don't like the additives and yellow food colouring in normal custard powder, you could try the Orgran custard powder instead.
