Healthy Carrot & Dried Cherry Slice

Low fat Carrot & Cherry Slice
140g self raising flour
1 tsp bicarbonate of soda
1 tsp cinnamon
100g castor sugar
300g carrots (approx. 3 medium sized) cut into 4cm pieces
70g dried cherries (could use cranberries or other dried fruit)
2 tbspns hazelnuts or other nuts like pecans
70 g canola oil
3 egg whites
Icing sugar to dust
Preheat oven to 180
o
C fan-forced. Lightly grease a 20 x 30 cm slice pan.
Beat the egg whites lightly (no need for the butterfly)
30 sec/speed 3
- remove from bowl and set aside.
No need to clean the bowl at any stage with this recipe.
Add the carrot and grate
4 sec/speed 7
- remove from bowl and chop by hand any pieces which are too large.
Add nuts and chop
1 sec/speed 7
. Set aside with the carrots.
Place the flour, bi-carb & cinnamon into the bowl. Mix
3 sec/speed 5.
Add sugar, carrot, dried fruit, nuts, oil and egg whites and mix for
15 sec/reverse/speed 2.
Scrape into pan and bake
25 minutes/180
o
C.
Leave in pan for 5 minutes then turn out onto a cooling rack until completely cool.
Cut into 18 pieces and dust with icing sugar to serve.

CP - This is delicious JD. It's not overly sweet and I like the dried cherries for a different flavour.
cookie - Just coming to post how nice this is and CP took the words right out of my mouth. It is not too sweet, just right. Thanks Judy I will be making this often. I used sultanas and walnuts.
Katiej - made this today and it is yummy! I used dried cherries and sultanas (no nuts). I also used mixed spice instead if cinnamon and rapadura in place of castor sugar. I can't stop eating it.

What an unusual combination. Although carrot and sultana cake is delicious so this will be too. Thanks Judy, I think this will prove very popular in this house.

It's really nice Cookie, light and tasty. I'll definitely be making it again to have on hand in the freezer for visitors.

It stays fresh for a while too Cookie, made mine on Thursday and left 4 slices out - have just eaten another piece, still nice and fresh.

I'm glad it stays fresh Judy, if we are all on the health kick things often take a while to eat. DH will take some to car club though.

Thanks CP, that's exactly what I thought about it. Katie gave me a container of dried cherries and this is the first time I've used them - I love the flavour hit you get when you taste a piece in this slice.

CP where did you buy your dried cherries please? I had some but I had bought them in SA.
Here is my slice. As I said I used sultanas and walnuts.
