Zucchini and Corn Patties

Zucchini and Corn Patties:

Perfect as finger food for toddler, great for lunch box and fantastic for family meal too (we have this with salad)

Number of People: 6

Ingredients:
1 1/2 cups cooked rice
2 zucchini, chopped roughly
1 onion, cut into quarter
a handful of parsley
2-3 eggs
1 1/2 cup breadcrumb (dry)
125g creamed corn (tin)

Olive oil to fry

Preparation:
Put zucchini, onion, and parsley in   *: at speed 7 for 5 second.

Add egg and rice at speed 5 for 5 second.

Now put breadcrumb and corned cream, blitz with  :-: for 3 seconds at speed 4.

Form patties, and fry lightly

Tips/Hints:
CP:DD made these tonight, but thought the mixture was quite sloppy/moist because of the zucchinis - do they have any flour added or would you put more rice in? She used fresh breadcrumbs, do you think there would be difference?

DD:I used dry breadcrumb and left it in the fridge before shaping.  Or may be add more breadcrumb if it's too wet?

JD:Another challenge recipe, I thought I'd whip up a few of these for myself, so using the following quantities I ended up with a perfect mixture and 7 little patties which were delicious.  The mixture was perfect for frying as you can see from the photo of them in the pan.  Thanks Denzelmum, they are tasty little morsels.

1/3 cup rice
65g zucchini
1 spring onion
large sprig parsley
1/4 cup panko breadcrumbs
1/3 cup corn kernels (meant to be creamed but the label told fibs )
Chopped slices of zucchini, the spring onions & parsley for 2 sec/speed 5.
Added corn kernels, egg, rice and breadcrumbs.  Mixed 2 sec/speed 5.
Heated a sprinkling of olive oil, added a heaped soup spoonful of the mixture and cooked 4 minutes each side on medium heat.

Denzelmum are the breadcrumbs fresh ones or packaged dry ones please?  Love the sound of these, thanks.
