I would like it if someone could convert this recipe for me to a TMX recipe. It's only a simple one so shouldn't be too hard but I haven't had success converting recipes.
Zesty Broccoli Pasta
1 tablespoon oil
2 cloves garlic, crushed
4 tomatoes, diced or canned diced tomatoes
1L vegetable Stock
375g penne pasta
500g (1-2) broccoli florets cut into small pieces (can also use stalk if want)
1 lemon, grated zest and juice
Method:
Heat pot on medium heat and add oil.
Add garlic and tomatoes and cook for 2-3 minutes.
Add vegetable stock and bring to the boil, about 3 minutes.
Stir in pasta and cook, uncovered for 12-14 minutes, stirring occasionally, or until pasta is al dente and most of stock is absorbed. Do NOT drain.
Add broccoli and cook for 2 minutes, stirring through occasionally, until broccoli is tender.
Stir through lemon zest and juice.
