If eggs are OK,  have a look at my Lemon Feather Cake.  It is made with Potato flour..  I haven't done so but I think you could sub.  the sugar with Xylitol or 'Sustainably Sweet'.  It is a very nice light cake and i make it for special occasions.  It is on my Blog and also on the Forum here.

are these Ingredients ok to use
Cake
1 1/2 cups whole almonds, toasted (see Tip)
4 large eggs, at room temperature (see Tip), separated
1/2 cup honey
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
Topping
2 tablespoons honey
1/4 cup sliced almonds, toasted (see Tip)
i don't need a recipe i'm italian

I can help with the gluten free part, but I'm unsure of the diabetic requirements. I have posted a recipe under "special diets" for a GF fudgy chocolate cake. (if I was clever I would insert a link to the recipe, but I'm on my iPad and don't know how to do it >:() it uses chick peas instead of flour. Don't let that put you off though as it results in a moist chocolatey cake that tastes nothing like chick peas. It does have 2/3 cup of brown sugar. I think you could adjust it to 1/2 cup and use the logical cane sugar which is lower GI, or an artificial sweetener like Splenda. Someone more knowledgable than me can probably give better advice about the sugar component. Good luck!

Judy thanks for doing the 'linking'.  Kids love chococake cake so one of the sugar subs.  I have suggested could work.  These were recommended by the people in the health food shop as favoured by diabetics.

I fluked this one. I opened up the web site I wanted to link to my post.  Tap and hold on the address until  the bubble comes up to select all. Tap that then go back to your forum post and tap and hold until the bubble comes up to say paste. there is probably another way to do it. Maybe ten ways but  I found this one easy. Aslo go to you tube and there is sure  to be about 8,000 people showing you "how to" anything.

Also you may have missed my post about using  the Atomic Web browser instead of Safari if the forum page is mucking up as mine does on the iPad with all the emoticons dancing about the page. Much lcleaner and clearer on Atomic Web which is a free download.

Thanks for the iPad tips. I just tried to do a link this way, but I can't get it to work. The address copied, but the link didn't work. I think I'll checkout You Tube as you suggest. Better luck next time!

You may find a difference if you copy the address rather than just paste. I have always  pasted so not sure about that. Everyday I find out something new and I think, oh duh!  There are a lot,of hidden tricks on the iPad. Steve Jobs had a sense of humour alright.
