Tweaked this recipe in the "My Way of Cooking" book.
DD doesn't like red peppers, so substituted olives (not sure how many - DH was cooking) and mushrooms which he put in at the beginning of recipe so they came out very chopped up (amazing what you can hide in a sauce!
), we did use the tomato 'frito' tip as well.
we used about 500g of skinless boneless chicken thighs (whole) but a full amount of sauce - final amount was just right - a rich tasty sauce and chicken cooked perfectly in 20 mins. Flavour was great. I think you may need to double the sauce recipe if you were doing 1000g chicken. Adding other veg at the beginning would also work - maybe carrots or other root veges???
The flavour was reminiscent of a cacciatore, and DD and DS (teenagers) gobbled the lot! - so much for leftovers
