Sweet chilli sauce review

We loive this, but it can catch us sometimes if the chillies I grew were hotter than I realised!  When that happens, turn it into a double batch of all the other ingredients but no more chillies.

Can anyone tell me if the 60g hot water in this recipe is supposed to be used to soak the chillies in step 1, or if it is separate to that and is to be added with other ingredients in step 2?

I am currently soaking my chillies in cold water with the expectation that I will add the hot water with all other ingredients at cooking time.

I have the book, and I agree it is a little confusing.  My gut instinct would have been to soak the chillies in the 60g water, and then to add the chilli and soaking water to everything else.  However, the recipe does say to "drain well".  So I am not too sure .......  But, I don't think that 60g water will make or break the recipe.

I have never made this sweet chilli sauce - I have always used the recipe from the forum:

If you want a milder sauce, de-seed the chillies.  If you want it hotter, leave the seeds in.  If you want it super-hot, use the tiny birds eye chillies instead of the long one.

Thanks Karen. My only concern in adding the hot water later if it isn't meant to be there is that it will be make the sauce too runny. I have put the chillies in the fridge for now and will wait and see if anyone else has a suggestion.

I have the book in front of me right now. Just looking at the quantities of ingredients and the amount of sauce the recipe claims to make, I would think you'd have to add the water in step 2. I haven't made it, but thats just what I think and what I would do if I were making it :-))
I agree with Karen that isn't written very clearly though :-\

I hope your sauce turns out okay :)

If the sauce end up too runny for your liking, just give it another few minutes on varoma temp with the MC cup off - that will thicken it up a bit.  Good luck, and let us know how it goes!

I see the confusion now that I've looked at the recipe Kerryn.  I really don't think it matters either way as 60g water is very minimal and as Karen said, you can easily cook that out at the end.  I suppose if you made it without the water in the first instance, you could keep an eye on it and add the boiling water during the cooking if you thought it was too thick or sticking to the bottom of the TM bowl.
