For the 2 of us I did just over half quantity of seafood, substituting prawns for scallops but did the full quantity of the sauce so that there was plenty to mix through the noodles. Cooked the large prawns for 3 minutes all up in a mixture of peanut oil and butter, removed the prawns then added the sauce from the TMX into the frying pan to collect all the taste from the pan.
Soaking vermicelli noodles differs according to what size you use.  Today I used the very thin ones and 15 minutes was far too long for them, some turned to glue but I had soaked 150g so there were plenty of good ones for our plates. I would check what the packet instructions say when you do this step.
We both enjoyed this very fast & easy meal but my lime was very juicy today and I think juice of 1/2 would have been enough (DH had no complaints though). Would make a lovely entree for dinner guests.

That looks so go.  I will give it a go when my book arrives.  Lots of prawns where I live.

Good point Judy - noodles can differ in soaking time! Best to look at the package instructions - will include this in the next print.

Opted for the prawn variation, and bought 400g which is the same weight as the scallops. Would have liked probably twice as many prawns as it wasn't enough. We had sooooo much rice noodles left over that I have noted to use only 200g next time. Will definitely make this tasty dish again for a light tea.

I originally put it under Food Sake -- what a duffer  :-)) How was your ratio of rice noodles to prawns JD?

I did half quantity of the recipe CP which should have been 200g noodles.  I soaked 150g but some went to mush so I just picked out the good ones and made a note to only use 100g noodles next time for half the recipe so yes, I agree with you that 200g for the whole recipe would be enough.
