Gluten Free Baking Mix

Just wondering if someone can point me in the right direction here for a non-GF substitute for the above product. I am doing the Potato, pea & mint quiche recipe from this months Australian Healthy Food Guide magazine which calls for 1 tblspn GF baking mix to be mixed in with the mashed potato and egg to form the base of the quiche.  Will I use just ordinary plain flour, cornflour or what please?

JD if I were making that recipe my interpretation would be GF plain flour. GF flours are generally a mix of different GF flours so I am sure you could get away with just substituting plain flour or corn flour or even a mixture of the both. Can't wait to see this recipe!!

I would use plain flour or potato flour.  Judy.

If it's only one tablespoon you need, definitely use normal plain flour or potato flour. It wouldn't be worth your while to go out and buy a GF plain flour mix for only that small quantity- like many GF products,  GF flour mixes are hideously expensive compared to normal wheat based products! We coeliacs sure pay a premium for gluten free food items! (just had to have a whine today to food manufacturers- some of us actually have to have a gluten free lifestyle to stay healthy and not get complications from eating gluten, not because we' wish to be fashionable!!!!)

Thanks for the responses girls, probably on the menu for tomorrow now.  We are not GF so, not having heard the term 'baking mix' before I thought I would check before using what I thought it might be.

I would have thought that even gluten free bread mix would be OK for this. Some GF mixes  are definitely labelled as baking mix, especially  mixes  from the USA.

It is a very broad statement isn't it - 'baking mix'.
