My regular recipe is vastly different from the one in ATOV.
1 cup plain flour (110g?)
70g butter
3 - 4 Tbsp iced water
After processing, press dough together on a lightly floured surface until almost smooth. Cover with plastic wrap and rest in the fridge for 15 minutes.
1/2 cup grated cheese
Roll out to a 20 x 30cm rectangle, sprinkle with half the cheese and press into dough. Fold pastry into 3 layers like an envelope, roll again to a rectangle. Repeat previous steps using the rest of the cheese.
Repeat again at least 3 more times, but without sprinkling with cheese. Refrigerate in between if pastry is becoming soft.
Finally, roll to 2mm thickness and cut into strips about 15 x 12cm. Brush with beaten egg and sprinkle with salt if desired. Twist each strip and place on lined trays. Bake 15 minutes at 180 degrees C or until golden.
These are delicious! I haven't made them for some time as they are a bit laborious. I guess , you could cut out all the kneading and folding, but just follow the recipe quantities and include the cheese in the dough.
