Baked coconut custard

Baked coconut custard


This recipe is from the CSIRO Total Wellbeing diet recipe book.
I've made it many times; it's a very easy light dessert.

Serves 4

Ingredients:

4 eggs
375ml can reduced fat coconut flavoured evaporated milk
125ml reduced fat milk
4 tablespoons sugar or powdered sweetener (I use Stevia)


Preparation:

Whisk all ingredients together in the TMX bowl at speed 6 for 30 seconds or until well combined.

Pour through a strainer into 4 (200ml or larger) ramekins or other oven proof dishes.

It's not in the recipe, but I sprinkle nutmeg on the top of the custards.

Place the ramekins in a roasting dish and pour hot water into the dish to come halfway up the sides of the ramekins.

The recipe says to bake at 160°C for 30 minutes (but my oven is a bit dodgy, so I bake at 170°C for approximately 40 minutes).  They should be just set and the middle should have a slight wobble.

Allow to cool and then chill in the fridge until ready to serve.

Serve with mango, pineapple, peaches or other fruit.

Katie - may I ask how much stevia you use in this recipe?  I'm thinking 4 Tablespoons of stevia would be way too much?

Katie,  this looks very nice.  Will make.  When I did WW years ago they suggested using several drops of coconut essence added to Light evaporated milk.  This was before you could buy it already prepared.   Glad to see you spoiling Judy.  ;D

Thanks for that tip Chookie. I hope you like it. Judy deserves spoiling!!

GF I did use 4 tablespoons of Stevia. I have granulated (powdered) Stevia which is used "volume for volume" in replace of sugar, i.e. 1 cup of sugar is equal to 1 cup of Stevia.  Other concentrated sweeteners may have to be used differently, but I haven't used them so I don't really know.

Thank you so much for that, Katie - I have the stevia powder but will certainly keep an eye out for this one!!

Do you make jam, etc with the stevia?

I've not made jam with stevia (I don't really ever make jam)

I've used it in desserts and some baking with success.

I have stevia seeds, just released. Must plant some.

Ooh obbie, how exciting!! Keep us informed of their progress.

This recipe sounds lovely. I don't have Stevia, but use Coconut Palm Sugar, Medjool Dates or Maple Syrup as a sweetener while I'm watching my weight. I believe that these sugars are the best to use. I have some Xylitol, but I'm just not sure about it...
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
