Made the salmon fillet with mushroom cream sauce tonight (pg 91). I loved it and my kids gave it an overwhelming "yum" . The idea of salmon and mushrooms together seemed slightly odd but I tried it and I think it works. Also I used ocean trout fillets instead of salmon and I think the final result would be very similar to salmon. For my kids to polish off the trout as well as the vegies and sauce is a miracle, so will definitely keep this one for future reference.
