Panaché de verduras (Vegetable panaché)

Name of Recipe:  Panaché de verduras (Vegetable panaché) – not tested

Serves 6

Ingredients 
100g extra virgin olive oil
250g potatoes, cut into fingers
200g frozen artichokes, cut into quarters
150g frozen French beans
150g courgettes, unpeeled, cut into fingers
200g mushrooms, coarsely chopped
150g frozen spinach
150g frozen cauliflower
250g small frozen peas
2 vegetable stock cubes or 1 tsp salt
A pinch of pepper

Preparation: 
Put the Butterfly on the blades
Pour the oil into the  *: 6 minutes / Temp. Varoma / Speed 2
Add the rest of the ingredients, except the peas 15 minutes / Temp. Varoma /  :-: / Speed  ^^
3 minutes before the end of the cooking time, add the peas through the hole in the lid.
Check the seasoning, leave to stand in the  *:, without removing from the machine, until it stops boiling and serve

Tips/Hints:  If you wish, at the beginning, you can add 50g cubed Serrano ham to the  *:, and at the end, a poached egg on each plate.  If the courgette is large and has seeds, remove them

Origin:  This is a translation of a recipe in Thermomix TM31 – Imprescindible para tu cocina which is the book supplied with Spanish TMXs.

This looks like an interesting recipe, I hope to give it a try, but not sure if we can get frozen artichokes over here - I will have to do a bit of hunting around in the supermarkets.

I have never seen them here either.  In town and cities you can sometimes come across fresh ones, but all I ever see is artichoke hearts (which is what I suspect they mean) preserved in olive oil.  I think a whole artichoke cut into quarters would be far too big and really only the flesh and hearts are edible.

I've got artichokes growing in my garden, but they only seem to ripen one at a time, so I could probably freeze them but, to be honest, I'm not sure what to do with artichokes.  No matter how many times I check up on the correct procedure I am not confident that I have ever quite got it right.  Next season when they are in at the farmer's market I might ask one of the stall holders there to demonstrate how to prepare them - then perhaps I will be able to freeze some as well.  We can get bottled artichokes here as well as those in the delis done in brine (I think it's brine, but am not sure).  I wonder if either of those options could be frozen?  Anybody got any thoughts on that possiblity?

Cuilidh, there is a James Martin video here which shows him preparing artichokes.  Looks a bit fiddly to me but you may like to give it a go.  I will be sticking to the ones in jars, I think :-[
